About the cook
Buddy Hart
Hey, I’m Buddy. This is where I keep the recipes I actually cook.
Most nights I cook. Not out of discipline, and not because I have any interest in plating, but because half an hour of chopping something with my phone in the other room is usually the calmest part of the day. I got into it the boring way. I was the roommate who didn’t mind cooking, then the friend who hosted, and after enough repetitions I stopped needing to look at the recipe.
I’m not a chef. I spent about six months in a restaurant kitchen in my twenties, mostly learning that I didn’t want to do it for a living. What stuck was the practical part: salt earlier than feels right, get the pan hotter than you think, taste the thing constantly instead of trusting the timer.
A recipe should tell you what it looks like when it’s going wrong, not just when it’s going right.
Everything here I’ve cooked more than once, in a normal kitchen, on a stove with one burner that runs hot. If a step is fussy and doesn’t change the result, I cut it. If something goes wrong easily, I say so in the recipe instead of pretending it doesn’t.
There’s no theme beyond that. Weeknight dinners mostly, a few things worth giving up a Sunday for, and the occasional dish I made eleven weekends running until it came out the way I wanted.
If you make something from here and it works, that’s the whole point. If it doesn’t, tell me what happened. I’d rather fix the recipe than defend it.

What’s for dinner?
Start with something for tonight. Most of these take under an hour and don’t need a special trip to the store.
