You probably have a bottle of it in your kitchen right now. It might even be the oil you reach for every single time you heat up a pan. But if you’re frying with the wrong oil, you’re ruining your food in ways you can’t see or taste until the damage is done. Bitter flavors, funky smells, a greasy film that clings to everything. Some oils simply were never meant to handle the heat of a frying pan, and using them anyway is one of the most common cooking mistakes in American kitchens.
Let’s talk about which oil you should never, ever fry with, why it fails so badly, and what to use instead.
Flaxseed Oil: The One You Should Never Fry With
If there’s one oil that has absolutely no business being in a hot pan, it’s flaxseed oil. Also called linseed oil, this stuff has a smoke point of just 225°F. To put that in perspective, most frying happens between 350°F and 400°F. You’re not even close. The second flaxseed oil hits a heated skillet, it starts breaking down and producing acrid, bitter smoke.
People buy flaxseed oil because it’s packed with omega-3 fatty acids, which sounds great on the label. But those same omega-3s are exactly what make it so unstable when heated. The polyunsaturated fats in flaxseed oil are highly reactive. A scientific study that simulated deep frying conditions by heating flaxseed oil at 180°C found that the most valuable compounds in the oil, the triunsaturated triacylglycerols, dropped by over 5.5% in just four hours. The oil basically ate itself alive. And it started transforming at temperatures barely over 100°C, which is about 212°F. That’s the temperature of boiling water.
The practical advice is dead simple: use flaxseed oil cold. Drizzle it on a salad. Stir it into oatmeal after you’ve turned the stove off. Add it to a smoothie. But the moment you put it in a frying pan, you’ve wasted your money and wrecked your dinner.
Other Oils That Can’t Handle the Frying Pan
Flaxseed oil is the worst offender, but it’s not alone. Walnut oil has a similarly low smoke point and the same omega-3 problem. Unrefined sunflower oil is another one that falls apart fast. The unrefined version has a much lower smoke point than refined sunflower oil, and it’s loaded with polyunsaturated fats that oxidize quickly when exposed to repeated heat, especially above 180°F.
Grapeseed oil is another one people grab because it sounds fancy. But its high polyunsaturated fat content makes it a poor choice for frying. And margarine, despite being a kitchen staple for decades, is basically refined vegetable oil in solid form. Heat it up for frying and it can go rancid fast.
The pattern here is clear: oils that are high in polyunsaturated fats are the ones that break down the fastest under frying temperatures. The molecular structure just can’t hold up.
Why Smoke Point Isn’t the Whole Story
Most people think choosing a frying oil is all about smoke point. Higher number equals better oil, right? Not exactly. Corn oil, for example, has a reasonably high smoke point. But experts say you should never fry with corn oil because it’s loaded with linoleic acid, a type of omega-6 fat that makes the oil unstable despite its impressive temperature rating on paper.
A 2018 study from De Montfort University tested 10 common cooking oils at both 356°F and 464°F over six hours. The results showed that oils high in polyunsaturated fats, like sunflower and corn oil, produced two to three times more breakdown compounds than oils high in monounsaturated fats like olive and avocado oil. So two oils can have similar smoke points but behave completely differently when you’re actually cooking with them.
Chemical and physical changes during heating don’t always line up with what the smoke point number on the bottle suggests. A research review confirmed this, noting that the composition of the oil matters more than its stated temperature threshold. The type of fat in the oil determines how it behaves, not just when it starts smoking.
The Problem With Seed Oils in Restaurants
Here’s something worth knowing the next time you eat out. The vast majority of restaurants in America fry with seed oils. Canola, soybean, cottonseed, corn, sunflower, safflower, grapeseed, rice bran. These oils are cheap to buy in bulk, which is why fast food chains and most sit-down restaurants use them.
The manufacturing process for these oils is pretty intense. The seeds or beans get crushed, bleached, refined, and heated to very high temperatures. The process often involves petroleum-based solvents like hexane to squeeze out every last drop of oil. By the time it reaches a fryer, it’s already been through a lot.
Martin Grootveld, a professor at De Montfort University in England, studied what happens when these oils get used in restaurant fryers. His research found that a typical serving of fish and chips fried in canola oil contained 100 to 200 times more aldehyde compounds than daily safety limits set by the World Health Organization. Compare that to frying in butter, olive oil, coconut oil, or lard, which produced far lower levels of those same compounds.
And then there’s the reuse issue. Many restaurants and street food vendors reuse cooking oil multiple times in a single day. Each round of heating accelerates the breakdown process. The oil gets darker, thicker, and produces more off flavors.
The Extra Virgin Olive Oil Confusion
This is where things get tricky, because olive oil lives in a weird gray area. Unprocessed extra virgin olive oil (EVOO) has a smoke point somewhere between 325°F and 375°F, depending on the quality. That’s fine for sautéing vegetables or doing a low-heat simmer. But for proper frying, where you need sustained temps of 350°F to 375°F, you’re right at the edge. One degree too high and your EVOO is past its limit.
The good news? Light or refined olive oil is a different story. It’s processed to remove the solids that burn easily, giving it a higher smoke point and making it more suitable for higher heat cooking. If you love the idea of cooking with olive oil but want to fry, go for the refined or “extra light” version, not the cold-pressed extra virgin bottle.
Interestingly, that same De Montfort University study found that extra virgin olive oil actually produced fewer breakdown compounds than canola and grapeseed oil when tested side by side. So while EVOO isn’t ideal for deep frying, it performs better than a lot of the oils people assume are superior for high heat.
What You Should Actually Be Frying With
So if flaxseed oil, walnut oil, unrefined sunflower oil, grapeseed oil, and corn oil are all out, what’s left? Quite a bit, actually.
Avocado oil is probably the single best frying oil available to home cooks right now. Refined avocado oil has a smoke point of 520°F, which is higher than practically any frying temperature you’ll ever use. It’s high in monounsaturated fats, which are more stable under heat than polyunsaturated fats. And it has a neutral flavor that won’t overpower whatever you’re cooking.
Coconut oil is another strong option, especially for things like fried chicken or doughnuts where a slight coconut flavor is either welcome or unnoticeable. The saturated fats in coconut oil are tightly packed together, making the oil very stable at high temperatures.
Clarified butter, or ghee, is an underrated frying fat. Regular butter burns quickly because of its milk solids, but ghee has those removed. It can handle high heat better than a lot of cooking oils, including standard olive oil. It also adds a rich, nutty flavor to fried foods that is hard to replicate with anything else.
Good old lard is making a comeback too, and for good reason. It’s a natural fat that has been used for frying for centuries. It produces fewer breakdown compounds than most seed oils and gives fried foods a crispy texture that vegetable oils struggle to match.
A Few More Tips for Better Frying at Home
Beyond picking the right oil, there are a couple of habits that make a real difference. First, don’t reuse frying oil over and over. Every time you reheat oil, it breaks down a little more. The color changes, the flavor gets off, and the quality drops. If you must reuse oil, strain it through a fine mesh sieve after it cools, store it in a sealed container, and limit reuse to once or twice at most.
Second, buy oil in smaller containers. A giant jug of oil sitting in your pantry for months is slowly oxidizing from exposure to light and air. Smaller bottles that you use up within a few weeks are going to perform better in the pan.
Third, if your oil starts smoking in the pan, don’t just keep cooking. That visible smoke is a clear signal that the oil has gone past its limit. Dump it, wipe the pan, start over with fresh oil at a lower temperature. Your food will taste better for it.
And finally, when you’re done with used frying oil, don’t pour it down the drain. Even small amounts can clog your pipes over time. Let it cool, pour it into an old container, and throw it in the trash. Some cities even have oil recycling programs if you want to go the extra mile.
The right frying oil isn’t complicated once you know what to look for: high smoke point, stable fats, and a neutral or complementary flavor. Keep flaxseed oil far away from your stovetop, be skeptical of cheap seed oils, and you’ll notice the difference in your cooking immediately.
